Diego is the newest restaurant added to MGM Grand's already impressive array of eateries. For those thinking about visiting Diego, I offer this warning: leave behind all preconceived notions about what Mexican food should be. You won't find your average Mexican fare of tacos and burritos at Diego. And that's a good thing!
Upon entering Diego, you will encounter a unique sensory experience. The restaurant is adorned with water art that decorates the tables and the interior entryway. We listened to classic rock music and munched on chips and quite possibly the worlds most wonderful mango salsa. Speaking of salsa, the salsa cart came by our table shortly after we were seated. After much debate (trust me this was no easy choice) we got to choose three of the six different salsas offered.
For appetizers, we ordered the guacamole with sun dried tomatoes that was prepared tableside. Additionally, we had the goat (Barbacoa de Chivo), which was surprisingly tender and flavorful, chicken enchiladas and a queso dip (Queso Fundido con Chorizo). For dinner we shared chicken mole. I have never had chicken that was so tender and extremely mouth-watering. Our server explained to us that a lot of effort goes into preparing the mole sauce.
If you consider yourself a dessert aficionado, you will not be disappointed. We sampled six of their desserts. The flan, which was accompanied by pepitas, melted in my mouth. Their sorbets were very refreshing and smooth. I particularly enjoyed their lemon tart and if I had to pick one dessert to recommend, that would be it.
Last but not least, I would like to compliment Diego on their terrific margaritas. All too often, margaritas are made to cover the taste of the tequila. It's rare indeed to find a restaurant that allows the flavor of the tequila and lime to come through. I can honestly say, Diego makes the best margarita that I’ve ever had.
Also, for those tequila lovers, Diego has an impressive tequila selection. You can sample tequila that's inexpesive, mid priced and we were told they have a very, very rare tequila that costs $300 a shot. My husband ordered one of their tequila flights so he could sample several different high end tequilas at same time. It was a nice finish to a very nice meal.
